Ingredients:
– 2 Large tomatoes
– 2 eggs
– 1 onion finely chopped
– 1 green chilli
– Salt to taste
– 1 tsp red chilli powder
– 1 tsp Turmeric powder
– 1 tbsp olive oil

Steps:
1. Cut the top of the tomatoes and scoop out the inside to make a hollow bowl.
2. Heat oil in a pan, add the chopped onions and sauté until light brown then add green chillies, salt, red chilli powder and turmeric powder.
3. Mix all the ingredients well and cook for 2-3 minutes then remove it from the heat and let it cool.
4. Stuff the cooked onion mixture in the hollowed tomatoes and place them in the same pan.
5. Break open an egg carefully into each tomato cup, sprinkle a pinch of salt over the eggs.
6. Cover the pan and cook on a low flame until the eggs are cooked to your liking.
