1. Two medium-sized cups of cooked rice
2. Two green chillies, finely chopped
3. One large egg
4. Half a cup of mixed vegetables like carrots, peas and beans
5. Two tablespoons of vegetable oil
6. Salt to taste
7. A pinch of pepper
8. A pinch of Turmeric

Procedure:

1. Heat the oil in a non-stick frying pan over medium flame.
2. Add the chopped green chillies and sauté for a minute.
3. To this, add the mixed vegetables. Cook until they are crisp.
4. In a bowl, whisk the egg with a pinch of salt and pepper.
5. Push the vegetables aside in the pan, pour the egg mixture and scramble it.
6. Once the egg is fully cooked, add the cooked rice.
7. Mix well until everything is properly blended together.
8. Sprinkle a pinch of turmeric for colour.
9. Cook for another two minutes stirring occasionally and serve hot.
