Recipe:
1/2 cup diced zucchini
1/2 cup chopped bell peppers
1/2 cup chopped tomatoes
1/4 cup canned chickpeas
1 tsp curry powder
1 tsp garam masala
1/2 cup vegetable broth
1 tsp olive oil
Salt to taste
A pinch of red chili flakes
2 basil leaves for garnishing
Procedure:
1. In a pan, heat the olive oil. Add the diced zucchini, bell peppers and chickpeas, sauté for a couple of minutes.
2. Add the curry powder, garam masala, red chili flakes, and salt to taste. Mix well.
3. Add the chopped tomatoes, sauté until tomatoes become soft.
