Cumin Infused Risotto with Stir-fried Veggies

You don’t need any exotic ingredients, just ones found in an everyday Indian kitchen. So get ready to put on your chef’s hat and prepare a meal that satisfies your tastebuds while keeping a watch on your calorie intake.

Recipe:
1. Boil 1 cup of Risotto rice and set aside.
2. Heat 1 tablespoon of olive oil in a pan, add 1 teaspoon of cumin seeds, let it crackle.
3. Add finely chopped garlic (2 cloves) and onions (1 medium) to the pan, sautΓ© till golden.
4. Add the boiled rice to the pan, mix well.
5. In another pan, heat 1 tablespoon of olive oil and toss 1 cup of mixed veggies (bell peppers, zucchini, broccoli) of your choice. Sprinkle a pinch of salt and stir until slightly crispy.
6. Serve the cumin-flavored risotto with the stir-fried veggies on top.
