Ingredients:
– 1/4 cup basmati rice
– 2 tbsp moong dal
– 1 cup mixed vegetables (carrots, peas, beans)
– 1 tsp turmeric powder
– Salt to taste
For tempering:
– 2 tsp vegetable oil
– 1 tsp cumin seeds
– 2 dry red chillies
– 2 bay leaves
Method:
1. Rinse rice and dal together. Soak for half an hour.
2. In a pressure cooker, put soaked rice and dal, mixed vegetables, turmeric powder, salt with 3 cups water. Cook until 4 whistles.
3. For tempering, heat oil in a pan, add cumin seeds, dry red chillies, and bay leaves. Fry for a minute.
4. Pour this tempering over the cooked Khichuri, mix well.
5. Serve the Bengali Khichuri hot, garnished with coriander leaves.
