Chingri Bhaat (Prawn Rice)

Ingredients:
1. Basmati Rice -1/3 cup (68 calories)
2. Prawns – 50 gm (60 calories)
3. Turmeric Powder – 1/2 tsp
4. Red Chili Powder – 1/2 tsp
5. Mustard Oil – 1 tsp (40 calories)
6. Salt to taste
7. Fresh Coriander for garnish
Instructions:
1. Clean the prawns and marinate with a pinch of turmeric and salt. Set aside for 15 minutes.
2. Cook the basmati rice until it’s 70% cooked and drain the excess water.
3. Heat mustard oil in a pan and add the marinated prawns. Fry until they become slightly golden, then remove and set aside.
4. In the same oil, add the partially cooked rice. Sprinkle turmeric powder, red chilli powder and salt. Mix well.
5. Cover the pan and let it cook on a low flame for about 10 minutes.
6. Once the rice is fully cooked, add the fried prawns and mix well. Cover again for 2-3 minutes so that the rice gets the flavour of the prawns.
7. Garnish with fresh coriander and serve hot.
Note: Use small-sized prawns to keep the calorie count low.
