Ingredients:
1) 1/4th cup Split Red Lentils (Masoor Dal)
2) 1 cup Mixed Vegetables (like peas, carrots, beans, corn)
3) 1 Green Chilli
4) 1/4th cup chopped Onions
5) 1/4th cup chopped Tomatoes
6) 1 TBSP oil
7) Salt to taste
8) Spices: 1/4th TSP Turmeric, 1/2 TSP Red Chili Powder, 1/2 TSP Coriander Powder, 1/2 TSP Cumin powder
Procedure:
1. Rinse lentils properly and let them soak in water for 30 minutes.
2. Heat oil in a pan and add green chilli, onions. Sauté until onions become translucent.
3. Add tomatoes, mixed vegetables, salt, and spice powders. Cook until tomatoes are soft.
4. Drain the lentils and add them to the pan. Cook on low flame for 15-20 minutes until the lentils and vegetables are well-cooked.
5. Garnish with coriander and serve hot.
