– 1 cup of poha (flattened rice)
– 1 onion, finely chopped
– 1 green chilli, chopped
– 1 egg
– 1 tablespoon oil
– A pinch of mustard seeds
– Salt to taste
– 1/2 teaspoon turmeric powder
– Freshly chopped coriander for garnish
Instructions:
1. Rinse the poha and drain all the water.
2. Heat oil in a pan, add a pinch of mustard seeds, green chilli, and onion. Sauté until onion turn translucent.
3. Add turmeric powder and salt, mix well.
4. Add the rinsed poha to the pan, then mix all the ingredients well. Cover and let it cook for 2-3 minutes.
5. Meanwhile, cook an egg to your preference (poached, scrambled, or sunny side up).
6. Once poha is cooked, switch off the flame. Plate the poha, place the cooked egg on top.
7. Garnish with fresh coriander and serve hot.
