Crisp Thai Vegetable Salad with Warm Quinoa & Spicy Tofu

Ingredients:
– 1 cup cooked Quinoa
– 50 grams Firm Tofu
– 1 cup mixed vegetables (Red and Yellow Bell Pepper, Carrot and Purple Cabbage)
– 1 teaspoon Olive oil
– 1 teaspoon cayenne pepper
– 1/2 teaspoon cumin
– Salt to taste
– Fresh cilantro for garnish, chopped
For the dressing:
– 10 ml Lite Soy Sauce
– 5 ml Rice Vinegar
– 1/2 Lemon, juiced
– Freshly Grated Ginger
– Chili flakes
Procedure:
1. Start by marinating the tofu in the cayenne pepper, cumin and a pinch of salt. Leave this for a few minutes.
2. Heat oil in a pan, add tofu and fry until golden brown. Set aside.
3. In a large bowl, combine the cooked quinoa, chopped mixed vegetables and tofu.
4. In a small bowl, whisk together soy sauce, rice vinegar, lemon juice and grated ginger. Adjust with chili flakes according to your spice preference.
5. Pour the dressing over the quinoa, vegetable and tofu mixture. Toss well until everything is well combined.
6. Garnish with fresh chopped cilantro before serving.
