Ingredients:
– 40g Quinoa
– 40g Green Lentils
– 100g assorted Veggies (Broccoli, Carrots, Peppers)
– 1/4 tablespoon Olive Oil
– 1/4 teaspoon Turmeric powder
– 1/4 teaspoon Cumin seeds
– Salt and Pepper to taste
– 1 tablespoon Lemon Juice
– Fresh Coriander for garnish
Instructions:
1. Rinse the quinoa and lentils then cook them in boiling water until soft. Drain and keep aside.
2. Preheat your oven to 180C. Toss the chopped vegetables in olive oil, turmeric, salt, and pepper. Spread them out evenly on a baking sheet.
3. Roast the veggies in the preheated oven for around 15 minutes or until they are golden and crisp.
4. In a large bowl, combine quinoa, lentils, and roasted veggies. Sprinkle cumin seeds on top.
5. Drizzle fresh lemon juice all over, garnish with coriander, and serve hot.
