– 1/2 Cup of Basmati Rice
– 2 Tbsp of Toor Dal (Split Pigeon peas)
– 1 Tbsp of Tamarind pulp
– 2 Eggs
– Salt to taste
– 1 Tsp of Turmeric powder
– 2 Tsp of Sambar Powder
– Handful of Coriander leaves
– 1 Tsp of Mustard Seeds
– 1/2 Tsp of Asafoetida (Hing)
– Few Curry Leaves
– 1 Tbsp of Oil
Instructions:
1. Rinse the rice and toor dal until the water runs clear. Combine them in a pressure cooker with 2 cups water. Cook for 4 whistles or until they are mushy.
2. Meanwhile, soak a small piece of tamarind in warm water to extract juice.
3. In a pan, boil the eggs, peel the shell and keep it aside.
4. In a large pan, heat 1 tbsp oil and add mustard seeds. Once the seeds start popping, add asafoetida and curry leaves.
5. Add the tamarind juice to pan and bring it to a boil.
6. Add turmeric and sambar powder, mix well.
7. Now add the cooked rice-dal, boiled eggs, and salt into the pan. Mix well, ensuring everything is combined.
8. Cover and simmer for 10 minutes to absorb all flavors.
