Ingredients:
1. Half cup cooked Quinoa (about 110 calories)
2. Quarter cup boiled Chickpeas (about 70 calories)
3. Half cup chopped Cucumber (about 8 calories)
4. Quarter cup of shredded Raw Mango (about 76 calories)
5. 1 teaspoon Lemon Juice (about 4 calories)
6. Salt, chili, turmeric, and cumin as per taste
Recipe:
Start by boiling the quinoa in a saucepan with a pinch of salt. Drain out the excess water and set aside. Similarly, boil the chickpeas till they become soft. Dice the cucumber and shred the raw mango into thin slices. In a large bowl, combine the cooked quinoa with the boiled chickpeas. Throw in the cucumber bits, shredded raw mango and drizzle the fresh lemon juice over it. Now it’s time to heat a teaspoon of oil in a small pan. Add cumin seeds and let them crackle. Add turmeric, chili powder, a pinch of salt and switch off the gas. Pour this heated mixture over the quinoa-chickpea mix in the bowl.
