Rajasthani Poha Bowl

Ingredients:
1. 1 cup Poha (beaten rice)
2. 1 onion (finely chopped)
3. 1 small potato (diced)
4. 1/2 cup frozen or fresh peas
5. 2 green chillies (sliced)
6. 1/2 tsp turmeric powder
7. 1 tsp mustard seeds
8. Salt to taste
9. 1 tsp oil
10. Fresh coriander leaves (chopped, for garnish)
Steps:
1. Rinse poha under running water till they become soft. Do not soak. Drain and set aside.
2. Heat oil in a pan and add mustard seeds.
3. Once the seeds start to crackle, add chopped onions and green chillies. Sauté until they turn slightly pink.
4. Add diced potato and peas to the pan. Stir well and cover the pan. Let it cook for 5-7 minutes on medium flame till they become soft.
5. Now add the turmeric powder and salt. Mix well.
6. Add the rinsed poha and mix everything together. Cook for another 2 minutes.
7. Turn off the flame and serve hot garnished with fresh coriander leaves.
