Dal and Vegetable Khichdi

Ingredients:
1/4 cup rice
1/4 cup moong dal (split green gram)
2 cups of chopped mixed vegetables (carrots, peas, beans)
1 teaspoon turmeric powder
Salt to taste
1 tablespoon oil
A pinch of asafoetida
1 teaspoon cumin seeds
1 teaspoon ginger paste
2 green chilies (optional)
2 cups water
Instructions:
1. Rinse the moong dal and rice together under running water until water runs clear.
2. Heat oil in a pressure cooker. Add cumin, asafoetida, ginger paste, and green chilies. Sauté until the raw smell goes away.
3. Add the chopped vegetables, turmeric powder, and salt. Mix well.
4. Add the rinsed rice and dal to the cooker. Stir well so that everything is well combined.
5. Add in the water and give a nice stir.
6. Close the lid of the pressure cooker and cook on medium flame for 3-4 whistles.
7. Let the pressure release naturally. Once released, open the cooker and gently fluff the khichdi with a fork.
8. Your delicious and healthy Dal and Vegetable Khichdi is ready to serve hot.
