Ingredients:
1. 100g Paneer (cubed)
2. 30g Pumpkin (diced)
3. 20g Green beans (chopped)
4. 20g Carrot (sliced)
5. 20g Potatoes (diced)
6. 2 tbsp Mustard oil
7. 1/2 tsp Panch phoron (Bengali five-spice mix)
8. Salt and Turmeric powder as per taste
Instructions:
1. Start by heating the mustard oil in a pan.
2. Add the panch phoron and allow it to splutter for a few seconds.
3. Add the diced pumpkin, carrots, potatoes and chopped green beans to the pan.
4. Season the vegetables with salt and turmeric powder, giving them a good stir.
5. Cover the pan with a lid and let it cook on medium flame until the vegetables are halfway done.
6. Next, add the paneer cubes to the pan, mix well and let it simmer till all the vegetables and paneer are cooked.
