1) Eggs – 2
2) Onion – 1 small finely chopped
3) Mixed veggies((Green beans, Carrots, etc.) – 1 cup finely chopped
4) Thai green chilies – 1-2 finely chopped (as per taste)
5) Garlic – 1 clove finely chopped
6) Turmeric powder – 1/2 teaspoon
7) Red chili powder – 1/2 teaspoon
8) Curry leaves – 4-5
9) Mustard seeds – 1/2 teaspoon
10) Salt to taste
11) 1 tablespoon of Olive oil

Instructions:
1) Heat Oil in a pan over medium heat. Add mustard seeds to it once the oil is warm. Let them pop.
2) Add the chopped garlic and onion to the pan and saute them till they turn a beautiful golden brown.
3) Add the mixed veggies to the pan and cook them until they’re soft.
4) Stir in the Thai green chilies, Turmeric, Red chili powder, and Salt. Continue to saute for another minute or two.
5) Crack the eggs into the pan and scramble them with the veggies in the pan. Continue to stir fry until the eggs are completely cooked.
6) Garnish with some fresh curry leaves before serving.
