Fiery Kolhapuri Chicken and Quinoa Bowl
A medley of subtly spiced quinoa combined with the bold flavours of Maharashtrian Kolhapuri Chicken, this one-bowl meal is a delicious answer to all your healthy cravings! Ingredients:
1/2 cup Quinoa,
200 grams Chicken Breast,
1/2 teaspoon Turmeric,
1 tablespoon Kolhapuri Masala,
1 teaspoon Ginger-Garlic Paste,
1 small Onion (chopped),
1 small Tomato (pureed),
Coriander (for garnish),
1 teaspoon Olive Oil,
Salt to taste.
Instructions:
1. Wash the quinoa under running cold water and then soak it for about 15-20 minutes. After soaking, cook the quinoa in a saucepan with 1 cup of water, a pinch of salt and simmer it for 10 minutes or until the quinoa is cooked and fluffy.
2. Marinate the chicken breast with turmeric, kolhapuri masala, ginger-garlic paste, and a pinch of salt and keep it aside for 15-20 minutes.
3. Heat 1 teaspoon of olive oil in a pan and sauté the chopped onions until they turn transparent. Add the marinated chicken to it and cook for 10 minutes or until the chicken is cooked properly.
4. Now, add the tomato puree to it and cook for another 5 minutes. Season it more if required.
5. Assemble the bowl by spooning in the quinoa at the bottom and topping it up with the prepared Kolhapuri chicken. Garnish the bowl with fresh coriander and serve hot.
Nutrition: Around 100 Calories per serving. This bowl is high in protein and low in fats. Contains essential nutrients and is very filling.
