Recipe
Ingredients:
1. 50g Brown rice
2. 50g Chickpeas
3. 10g Avocado
4. 10g Baby spinach
5. 5g Ginger
6. A pinch of Turmeric, ground cumin, ground coriander, and red chili powder
7. 1 tsp Olive oil
8. Salt to taste
Instructions:
1. Start by boiling one cup of water in a pan. Add a pinch of salt and brown rice to the boiling water. Cover it and leave it to cook for about 30 minutes or until the rice is soft.
2. In another pan, boil the chickpeas with a pinch of turmeric and salt until they become tender. This should take around 20-30 minutes.
3. While the grains and legumes are cooking, finely dice the ginger and mix it with ground cumin, coriander, and red chili powder. Warm a teaspoon of oil in a small pan and add ginger and spice mixture. Sauté for few minutes until the raw smell of spices goes away.
4. Now lightly sauté baby spinach in the same pan till it wilts slightly.
5. Finally, assemble the bowl. Start with a base of brown rice, add a portion of spiced chickpeas next. Then sprinkle the wilted spinach, slices of avocado, and drizzle the spiced oil over everything.
