Goan-Style Jain Spiced Quinoa Bowl

Ingredients:
1. 1/2 cup of Quinoa
2. 1/2 cup finely chopped mixed vegetables (bell peppers, beans, carrots)
3. 1 Green chili, finely chopped
4. Salt and pepper to taste
5. 1 tsp Lime juice
6. A pinch of Turmeric
7. 1tsp Olive oil
8. Fresh coriander leaves for garnish
Recipe:
1. Rinse quinoa under cold water for a couple of minutes until the water runs clear. Drain and set aside.
2. In a saucepan, heat olive oil and add chopped vegetables. Sauté for a few minutes until they are slightly tender.
3. Add in the rinsed quinoa, chopped green chili, salt, pepper, and turmeric. Stir well for a minute to mix everything.
4. Add in 1 cup of water and bring the mixture to boil. Reduce heat, cover and simmer for about 15 minutes or until quinoa is cooked and all water is absorbed.
5. Remove from heat, add lime juice, and fluff the quinoa using a fork.
