8. Asafoetida – a pinch
9. Salt – to taste

Instructions:

2. Once quinoa is cooked, transfer it to a flat plate. Spread it out to cool and to ensure the grains do not stick.
3. Heat oil in a pan, add mustard seeds, and wait till they crackle.
4. Lower the flame, then add chopped green chillies, curry leaves, and asafoetida. Sauté for a minute.
5. Now add turmeric powder and salt. Stir well.
6. Increase the flame to medium, add the cooled quinoa, and stir well.
7. Squeeze lemon juice over quinoa and mix well until everything is well incorporated.
8. Garnish with chopped fresh coriander.
