Ingredients:
1. 1/4th cup Quinoa
2. 2 Egg whites
3. 1/2 cup chopped Onion
4. 1/2 cup chopped Bell pepper (Green or Red)
5. 1/2 tsp Turmeric powder
6. Salt to taste
7. 1/2 tbsp Olive Oil
8. 1/2 cup diced Tomatoes
9. A pinch of Garam Masala
10. 1 Green Chili
11. Handful Coriander leaves
12. A pinch of Red Chili powder
Instructions:
1. Rinse the quinoa and put it in a pan. Add 1/2 cup water. Let it cook on a medium flame for about 15 minutes. Once cooked, the quinoa will become fluffy. Keep it aside.
2. Add oil to a pan. Once it is hot, add the chopped onions, green chilies, and bell peppers. Sauté them with a pinch of salt till they become soft.
3. Next, add the tomatoes along with turmeric and red chili powder. Keep stirring till the tomatoes turn soft and mushy.
4. After the veggies are cooked, turn the heat to low and carefully add the egg whites. Stir for a few minutes till they scramble and cook perfectly.
