Soy-Sautéed Vegetables with Indian Flavored Brown Rice

The dish contains classic Indian food items like brown rice and various common Indian veggies, tossed in Chinese seasonings. Soy-sautéed veggies retain their crunch, color, and nutrients because of quick stir-frying at high heat. The Indian flavored brown rice provides a fiber and protein-packed base. Ingredients:
– 1 cup of cooked brown rice
– Assortment of veggies (bell peppers, carrots, cabbage, beans), thinly sliced: 2 cups
– Soy sauce: 1.5 tablespoon
– Indian spice blend (cumin, coriander, turmeric, chili powder, garam masala): 1 tablespoon
– Salt to taste
– 2 tablespoon cooking oil
1. Heat one tablespoon of oil in a pan, add rice and Indian spice blend and sauté until it’s well mixed. Set aside.
2. Then in the same pan, heat another tablespoon of oil, add the assigned vegetables and stir-fry them on high flame for two minutes.
3. Mix in the soy sauce and quickly sauté for a minute.
4. Serve the sautéed veggies over the spiced brown rice.
Note: Amount of oil and soy sauce may change according to taste.
