Ingredients:
1. 100gms chicken breast
2. 1/2 cup cooked basmati rice
3. 1/2 can light coconut milk
4. 2 bird’s eye chilies
5. A handful of fresh Sweet Basil
6. 1/4 tsp of Turmeric
7. Salt and pepper
8. 1 Tbsp Olive oil
Instructions:
1. Marinate chicken in salt, pepper, and finely chopped bird’s eye chilies for 20 minutes.
2. Heat olive oil in a pan and sauté the marinated chicken until it turns golden brown. Remove and set aside.
3. In the same pan, add coconut milk, turmeric, and a pinch of salt. Bring it to a simmer.
4. Add cooked basmati rice to the pan, mixing it well with the coconut milk mixture. Simmer till the rice absorbs the liquid.
5. Add the sautéed chicken back to the pan, tossing it well so that it’s coated with the turmeric coconut milk mixture.
6. Garnish with a handful of roughly torn sweet basil leaves.
