Vegan Italian Khichdi

Recipe:
Ingredients:
1. 3 tablespoons of black lentils (urad dal)
2. 1 small zucchini, chopped
3. 1 small bell pepper, chopped
4. 1/2 onion, finely chopped
5. 2 cloves of garlic, minced
6. 1 teaspoon of olive oil
7. A pinch of turmeric, cumin seeds
8. Salt and pepper to taste

Instructions:
1. Rinse the lentils and soak them for 30 minutes. Drain.
2. In a pan, heat oil. Add the cumin seeds and let them splutter.
3. Add the onions and sauté until it turns transparent.
4. Add garlic, zucchini, bell pepper and sauté for another 4-5 minutes.
5. Now add the drained lentils, salt, pepper and turmeric. Mix well.
6. Add 1 cup of water, cover and let it cook for 15-20 minutes or until the lentils are cooked and all the water has been absorbed.
7. Your Vegan Italian Khichdi is ready to be served.
