Ingredients:
– 1 cup quinoa
– 1 cup boiled chickpeas
– 1 onion, finely chopped
– 1 medium-sized tomato, finely chopped
– 1 teaspoon turmeric powder
– 1/2 teaspoon red chili powder
– 1 teaspoon cumin seeds
– 1/4 teaspoon asafoetida (hing)
– 2 tablespoons oil
– Salt as required
Instructions:
1. Rinse the quinoa thoroughly under running water. In a saucepan, add quinoa with two cups of water and bring it to a boil. Once it starts boiling, reduce the heat, cover the pan, and let it simmer until all the water is absorbed. Fluff the quinoa with a fork and set it aside.
2. In another pan, heat oil and add cumin seeds. Once the seeds begin to splutter, add asafoetida, onions, and tomatoes. Cook till the onions turn light brown and the tomatoes become mushy.
3. Now add in the turmeric powder, red chili powder and stir well. Add in the boiled chickpeas and mix everything together.
