Recipe:
Ingredients:
1/2 cup millet (Indian grain)
2 eggs
1 tablespoon extra virgin olive oil
1 cup mixed vegetables (bell peppers, broccoli, baby corn)
1/2 teaspoon turmeric powder
1/2 teaspoon cumin seeds
1/2 teaspoon Chinese five spice
1/2 teaspoon Chilli flakes
Salt, as required

Instructions:
1. Rinely rinse and then soak the millet in water for 30 minutes.
2. In a pan with oil, sauté the cumin seeds until they crackle.
3. Add the mixed veggies. Sauté them until they are half cooked.
4. Add the spices: turmeric powder, Chinese five spice, chilli flakes and salt. Stir to mix everything well.
5. Add soaked millet into the pan. Stir and sauté for 2-3 minutes.
6. Add 1.5 cups of water and cover the pan.
7. On a low to medium flame, simmer and cook millet until all the water is absorbed.
8. Meanwhile, crack open the eggs in a bowl and beat them. In a separate pan, scramble the eggs. Keep aside.
9. Once the millet is cooked, add the scrambled eggs to the pan. Mix well.
10. Serve this healthy and nutritious Chinese Style Egg Fried Millet while it’s still hot.

Optional: you can garnish with some chive or spring onion greens before serving. This dish can be paired with tangy tamarind chutney or a yogurt dip.
