Gujarati Khichdi

Ingredients:
– Rice (¼ cup)
– Split yellow moong dal (¼ cup)
– Salt (to taste)
– Turmeric powder (¼ tsp)
– Vegetable oil (1 tsp)
– Cumin seeds (½ tsp)
– Asafoetida (a pinch)
– Chopped green chili (1)
– Fresh coriander leaves for garnish
Instructions:
1. Rinse the rice and dal under running water until the water runs clear. Soak them in enough water for 15-20 minutes.
2. Drain the rice and dal. Add them to a pressure cooker with 2 cups of water, salt, and turmeric powder.
3. Close the lid and cook on high heat for 4-5 whistles. Let the pressure release naturally.
4. Once the pressure is released, open the lid and stir the Khichdi with a ladle.
5. For the tempering, heat oil in a small pan. When the oil is hot, add cumin seeds and asafoetida.
6. Let the cumin seeds sizzle for a few seconds. Add chopped green chili and cook for another 2-3 seconds.
7. Pour the tempering over the cooked Khichdi stirred well.
8. Mix it well and simmer for 2-3 minutes.
9. Garnish with fresh coriander leaves and serve hot.
