Ingredients:
1 cup finely chopped vegetables (cabbage, carrot, bell peppers, broccoli)
1/2 cup boiled chickpeas
1/2 cup cooked brown rice
1 tsp oil
Spices (1/2 tsp turmeric powder, 1/2 tsp red chilli powder, salt to taste)
2 tsp lemon juice
1 tsp soy sauce
10-12 roasted peanuts
Fresh coriander for garnishing
Instructions:
1. Heat oil in a pan, add the chopped vegetables, salt, turmeric powder, and red chilli powder.
2. Sauté the vegetables until they’re cooked but still have a bite.
3. Mix in the boiled chickpeas, toss gently.
4. Prepare the dressing: mix lemon juice and soy sauce.
5. Place the cooked brown rice at the bottom of your bowl.
6. Top it with the sautéed vegetables and chickpeas.
7. Pour the dressing over the top.
