Ingredients:

– 1/4 cup Quinoa
– 1 small Mango
– 1 inch Ginger
– 1 tsp Olive Oil
– Salt, to taste
– 1/4 tsp Turmeric Powder
– 1/2 cup Water
– Juice of half Lemon
– Fresh Coriander leaves for garnish

Instructions:

1. Rinse the quinoa under cold running water until the water runs clear.
2. Heat a small pan, add olive oil.
3. Add finely chopped ginger and sauté for a few seconds until you smell the aroma.
4. To this, add the rinsed quinoa and sauté for a minute.
5. Add turmeric powder, water, and salt.
6. Cover and cook on a low flame until quinoa is cooked and all the water is absorbed.
7. While the quinoa cooks, peel and chop the mango into small cubes.
8. Once the quinoa is cooked, fluff it with a fork, and allow it to cool.
9. On cooling, add the lemon juice and mango chunks.
10. Mix well and garnish with fresh coriander leaves.
11. Your Mango Ginger Quinoa bowl is ready to serve.
