1 cup Cooked Quinoa
1/2 cup Diced Paneer (Indian Cottage Cheese)
1/2 cup Diced Bell Peppers
1 tsp Cumin Seeds
1/2 tsp Turmeric Powder
1 tsp Chilli Powder
1 tsp Olive Oil
Salt to taste
1. Heat the olive oil in a pan. Add the cumin seeds. Once the seeds start to sizzle, add the diced bell peppers.
2. Sauté the bell peppers until they are tender-crisp. Drop in the diced paneer to the pan.
3. Stir fry until the paneer turns a slight golden brown. Sprinkle turmeric powder, chilli powder and salt. Give it a good mix to make sure the paneer is well coated with spices.
4. Finally add the cooked quinoa to the pan. Mix it all together until the quinoa is well integrated with paneer and bell peppers.
5. Allow it to cook for two minutes with occasional stirring, then take off the heat.
