Spiced Lentil and Egg Bowl

Ingredients:
1) Split Yellow Lentils (Moong Dal)- 1/4 cup
2) Eggs -2
3) Onion – 1
4) Tomatoes – 2
5) Turmeric Powder -1/4 tsp
6) Red Chilli Powder – 1/2 tsp
7) Salt – as per taste
8) Oil – 1 tsp
9) Mustard Seeds – 1/4 tsp
10) Finely chopped coriander for garnishing
Recipe:
1) Pressure cook the lentils with 1.5 cups of water, turmeric, salt, and a hint of oil till they are mushy. Set aside.
2) Hard-boil the eggs, deshell, and slice them. Set these aside as well.
3) Dice the onions and tomatoes.
4) In a pan, heat the oil and splutter mustard seeds.
5) Add the onions next and sauté till they are translucent.
6) Now add the tomatoes and cook till they are slightly mushy.
7) Add the red chilli powder and sauté till the raw smell disappears.
8) Add the cooked lentils and mix well. Adjust the salt if needed.
9) Let it simmer for 5 minutes.
10) Serve the spiced lentil in a bowl, topped with sliced boiled eggs. Garnish with coriander leaves.
