– 2 tablespoons coconut oil
– 1 teaspoon mustard seeds
– 5-6 curry leaves
– 1 small onion, finely chopped
– 2 small green chillies, slit
– 2 tablespoons grated coconut
– Salt as needed
1. Rinse and soak the brown rice in water for about 30 minutes.
2. Rinse the lentils thoroughly in water and drain. In a pressure cooker or a heavy-bottomed pot, cook the lentils with turmeric powder and salt until softened.
3. In a separate pot, cook the soaked brown rice until it is fully cooked and the grains are separate. Set aside.
4. In a pan, heat coconut oil. Once hot, add mustard seeds and let them crackle. Next, add curry leaves, finely chopped onion, and slit green chillies. Sauté until the onions turn transparent.
5. Add the cooked lentils to the pan and stir well. Cook for a few minutes until the flavors meld together.
6. Add the grated coconut, stir well, and let it cook for another few minutes.
7. Finally, serve the lentil coconut curry over the cooked brown rice in a bowl.
