Ingredients:
1/2 cup Moong Dal
1 medium-sized Sweet Potato
2 Tomatoes
1 Cucumber
1 teaspoon Olive Oil
Salt to taste
A pinch of Black Pepper
Lemon Juice of half a Lemon

Step 1: Soak the moong dal in hot water for about 20 minutes. Then rinse and drain it.

Step 2: Dice sweet potatoes, tomatoes and cucumber into small pieces.

Step 3: Cook the diced sweet potatoes in a microwave or steamer until they are tender.

Step 4: In a pan, heat a teaspoon of olive oil. Add the soaked and drained moong dal to it. Stir till the dal is cooked yet crunchy.

Step 5: In a large bowl, combine cooked sweet potatoes, tomatoes, cucumber, and cooked moong dal. Toss them well.

Step 6: Sprinkle some salt, black pepper, and drizzle the lemon juice over the salad.
